Douglas Marshall
Dr. Douglas L. Marshall is Associate Dean, College of Natural and
Health Sciences, University of Northern Colorado. He also is a tenured
Public Health Professor in the School of Human Sciences at UNC. Prior
to joining UNC he held professorial positions at Mississippi State
University (1994-2007) and Louisiana State University (1989-1994).
Since 1996, he has served as cofounder, President, and Director of
the Food Safety Institute, LLC, Baton Rouge, Louisiana, which is an
integrated food safety consulting and analytical services company.
Dr. Marshall received his B.S. (Microbiology, 1982) and M.S. (Food
Science & Technology, 1985) degrees from the University of Nebraska and Ph.D. degree (Food Science & Human
Nutrition, 1989) from the University of Florida.
His public health
teaching and research interests include discovery of novel antimicrobial
agents, rapid methods development, and control of microbial pathogens.
He has over 200 published refereed journal articles, proceeding papers,
books, and book chapters. He served as Contributing Editor for the
peer-reviewed scientific journal Food Microbiology (2001-2007). Dr.
Marshall has received numerous local and national awards for his contributions
to food microbiology and is a frequent speaker on the topic.
